The Culinary Apprenticship Certificate is a 9-month intense program designed for aspiring culinary professionals with a passion for food who desire something more than the traditional, classroom-based culinary education program. You will work hands-on in the kitchens of accomplished professional chefs who will provide the tools needed to succeed in the hospitality industry. Classes will be held at KSU Center, primarily in the kitchen classroom.
Exploring a wide-ranging curriculum through the Culinary Fundamentals textbook published by ,The American Culinary Federation, you will learn everything from basting and poaching to marinades and meringues. Close-up demonstrations by your instructor will help you practice techniques in the kitchen classroom and find your hidden talents.
An industry standard for everyone in the restaurant business, "Serv Safe" food handling protocol will be taught and presented in a separate seminar by a highly qualified instructor. After passing the "Serv Safe" exam, you are ready to get behind the counter at any food establishment.
In addition, you will spend a total of 120 hours in the classroom with a classically trained chef learning the essential skills necessary to work at the professional level. Knife skills, nutrition and the entire cooking process, from food and equipment prep to plating and serving exquisite dishes, will all be covered in weekly classes.
Your apprenticeships will consist of approximately 15 hours per week in rotation between four venues, including restaurants, catering companies and special event facilities.
By completing 420 hours of apprenticeship work divided into four different rotations, you will gain hands-on experience in a variety of food service environments. Working 105 hours at each location, you will make important connections in the restaurant industry and gain valuable experience for your resume.
Prestigious names like Park 75 Restaurant at Four Seasons Hotel-Atlanta, Elevation Chophouse, Endive Catering and Villa Christina at Perimeter Summit will enhance your credentials. Through our certificate program, you will work at these or similar Atlanta landmarks.
As a grand finale, you will end the program by participating in an elegant "Chef's Table" tasting event at the KSU Center. Friends and families, along with University administrators, will gather to sample and discuss dishes created and served by you and your classmates. This exciting event offers the perfect showcase for the talents and skills you will have gained throughout the program.
